How can I add or erase a Contact on my emails???

When MSN changed my hotmail to Outlook, it's very difficult to handle "contacts". I wanted to erase, or add a "contact", how do I do that????

Please help.

Also when I attached pics to my emails they are so big... not like regular attachments as before... Please help
