Can you have 2 sets of mirrored drives

I have a Win7 x64 Pro box that i use as a file server. I originally set it up with 2, 1TB drives and mirrored them. Now I've outgrown them and purchased 2, 3TB drives to mirror.

 

I converted the disks to GPT disk to recognize above 2TB's, but when I try to create a Mirrored Volume, the option is greyed out. Every other other RAID option is also greyed out.

 

What am I missing?Thanks in advance- Smarter IT.
