I have 3 different video cards installed on my computer, and need to delete
two of them. How can this be done safely?

Safe Mode, Device Manager, List all the devices, delete the old ones, boot
into normal mode.

Just curious.... wouldn't you need to remove the drivers and stuff for the
other cards?

No.

The drivers will just stay unused on your machine.

XP will only load them if there is a device to use them.

Goto the device manager and find and uninstall each you want to remove.
Shutdown and power off the power supply and remove the cards you want gone.
Switch on or connect power cord and power up into windows. They should be
cleanly removed now.
