Are there any errors or warnings in the EventLog of these servers
when this happens?
Have you considered installing SP2? It contains a couple of hotfixes
for issues like "the TS stops responding", for example (but there are
more):
923630 - A Windows Server 2003-based terminal server stops responding
to new connection requests, and the logon window does not appear
