We are in the process of changing one of our internet routers at our
office, it will be using a different IP so i need to change all the
clients (XP and 2000) default gateway from 192.168.0.1 to xx.xx.xx.6
Can this be done with group policy somehow?

Are you using DHCP?

Yes we are.

Change the router option on the dhcp to point to the new ip for the gateway.
